About Me
Hello, I'm Tina Fukumoto, better known as The Knife Lady. I have always loved
cooking and learned early that the right tool for the job
is essential - especially cutlery. The knife you use should feel like an
extension of you and be a joy to use.
My first real experience with learning to sharpen knives was in Japan 25 years
ago. Since then I have returned many times for further study and acquisiton of
cutlery. In America I have continued to develop my skills, by acquiring better tools
and techniques to master a whet stone sharpening system that is completely done
by hand, using only natural materials. This method is easily portable allowing me to
service restaurants or other locations.
Having worked with knife reps for more than 9 years as a purchasing manager for a
restaurant supply company I learned the complexities, processes and effects
of metallurgy, composition and construction of fine cutlery. I catered to
the professionals as well as culinary students and home cooks. So, no matter
your level of experience, there's a sharp knife for you.
As a culinary arts instructor I enjoy seeing students learn and develop knife
skills as well learn the proper use of each knife. Even the most beginning
students instantly appreciate a sharp knife over a dull one.
So many knives and so little time! I have over 100 quality knives from antiques to
hand forged to the newest in -the real- cutting edge technology.
